Recipes COOKED PUMPKIN WITH CREAM SAUCEIngredients for Cooked Pumpkin:1 medium sized green pumpkin3 large onions2 sticks of butterSalt and PepperCooked Pumpkin1. Peel Pumpkin2. Grate (use side of grater that gives the biggest pieces) -using a food processor to grate is also easier!3. Boil approx. 10-12 minutes and test for tenderness. Don't wait too long or the pumpkin will get mushy!4. Slice all 3 onions into long, thin strips5. Sautee onions and 2 sticks of butter in pan while water for pumpkin is boiling6. Drain Pumpkin add onions and Cream Sauce*. Mix well. You can serve immediately!Ingredients for Cream Sauce:1 stick of butter12 tbsp. flour Combine all ingredients for Cream Sauce in sauce pan on low heat. 4 1/2 cups of hot milk Mix well before adding to pumpkin4 tbsp. Using a spoon, scrape the pulp and seeds out of your pumpkin into a bowl.Clean the seeds: Separate the seeds from the stringy pulp, rinse the seedsin a colander under cold water, then shake dry. Don't blot with paper towels; the seeds will stick.Dry them: Spread the seeds in a single layer on an oiledbaking sheet and roast 30 minutes to dry them out.Add spices: Toss the seeds with olive oil, salt and yourchoice of spices (see below).
